from the kitchen: vegan carobou brownie cookies

1 cup spelt flour
1/4  cup plus 2 Tablespoons roasted carob powder
1/4 cup plus 2 Tablespoons coconut sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup sunflower oil
3 Tablespoons milk of choice
2 Tablespoons maple syrup
1 teaspoon vanilla extract

In a large mixing bowl combine all the dry ingredients and stir very well. In a medium mixing bowl, combine all the wet ingredients. Pour wet ingredients into dry and stir to form a dough. Roll out smallish balls onto a cookie sheet, and put in the refrigerator for an hour to chill. Preheat the oven to 300 degrees F. Bake the cookies for 12 minutes.
